Cottage Cheese Sandwich

You simply can’t go wrong with this open-faced sandwich recipe. What makes this a step-up from the average breakfast sandwich is the unique combination of cottage cheese, avocado, and deli turkey. It will give you enough energy to start your day and a good amount of protein for those growing muscles. It’s so delicious and yet very easy to make–we recommend this to everyone who’s just starting to cook for themselves!

Ingredients:

1 whole wheat English muffin
1 tbsp fat-free mayonnaise
2 slices low-fat deli turkey
2 slices tomatoes
½ cup fat-free cottage cheese
1 tbsp green onion, chopped
½ avocado

Directions:

  1. Toast whole grain English muffin until slightly brown.
  2. Slice the muffin into two and smear mayonnaise on each side.
  3. Top each side with turkey breast and tomato slice.
  4. Top each muffin with 1/4 cup of cottage cheese.
  5. Top each half with avocado.
  6. Sprinkle with green onions and ground pepper. Enjoy!
