Coconut Chia Pudding

Craving for a creamy pudding for breakfast, but don’t want the empty carbs? Try this delightful chia pudding instead!

Chia seeds are a great source of fiber, protein, vitamins and minerals. This superfood is also a great source of complete protein and omega fatty acids, making it a staple for vegans and low-carb dieters. Because chia seeds soak up liquid, letting them sit in coconut milk for a couple of hours gives it a thick, pudding-like texture. The use of coconut milk also heightens the creaminess of this recipe, while providing you with a good dose of medium-chain triglycerides.
