Triple Chocolate Fudge Protein Brownies

Ingredients:

1½ scoop whey protein isolate, chocolate flavor
½ cup almond meal
½ cup coconut flour
¼ cup raw cacao powder
½ cup Splenda
1 tsp baking powder
½ cup sweet potato, mashed
¼ cup extra virgin coconut oil
½ cup nonfat plain Greek yogurt
2 tbsp maple syrup
½ cup chocolate chips

Directions:

  1. Preheat oven to 163°C (325°F).
  2. Line an 8’ x 8’ baking dish with parchment paper, or spray with cooking spray. Set aside.
  3. Combine all brownie ingredients (except for chocolate chips) using a blender or food processor. Stop and scrape the bottom and sides of the mixer to ensure the batter is well combined. Pulse again.
  4. Stir in chocolate chips.
  5. Spoon brownie batter into prepared baking dish and smooth down with a spatula. Bake in the oven for 34-38 minutes.
  6. Remove from the oven and let cool for at least 30 minutes.
  7. Slice brownies into 16 even pieces. If desired, melt chocolate chips and white chocolate chips to drizzle on top of each brownie square. Serve immediately.
