Chocolate Coffee Avocado Pudding

When we think of pudding, we think sweet, rich, creamy–and of course loaded with sugar and saturated fat. But this pudding recipe lets you enjoy the rich and creamy goodness of chocolate pudding without the guilt!

The secret to this healthy pudding recipe is in using avocado as your base. Mashed avocado has a naturally creamy texture and neutral flavor which makes it a great base for this guilt-free pudding recipe. It’s also high in monounsaturated fats that promote heart health–which is one more excuse to enjoy this delicious dessert often!

Ingredients:

1½ avocado
6 tbsp cocoa powder, unsweetened
6 tbsp sugar-free maple syrup
¼ cup canned evaporated milk
1 tsp vanilla extract
1 tsp instant coffee

Directions:

  1. Blend all ingredients in a food processor or blender until smooth.
  2. Pour into cups, sprinkle with coarse salt, and cover with lid.
