High-Protein Oatmeal Cookies

The addition of protein powder also makes the cookies chewy and crumbly, while also providing building blocks for your growing muscles. The combination of oats, dried coconut, almonds, and raisins also create an interesting texture that you’ll surely enjoy!

Ingredients:

4 cups raw oats
1 cup unsweetened applesauce
½ cup egg whites
4 tsp baking Stevia
3 tsp vanilla extract
8 scoops whey protein powder, vanilla
2 tsp olive oil
1 cup raisins
8 tbsp dried coconut
½ cup ground almonds
2 tbsp cinnamon

Directions:

  1. Preheat oven to 163°C (325°C).
  2. Combine all of the ingredients together in a mixing bowl.
  3. In a greased baking sheet, scoop about one tablespoon of batter to make one cookie. This recipe makes about 48 cookies.
  4. Bake for 20 minutes or until the cookies turn golden.
