Hemp Granola with Greek Yogurt

Ingredients:

1 tbsp extra virgin coconut oil
1 tbsp maple syrup
½ cup rolled oats
¼ cup hemp seeds
¼ cup almonds, slivered
¼ cup dried cherries
1 tsp cinnamon
1 pinch table salt
3 cups nonfat plain Greek yogurt

Directions:

  1. Heat skillet with coconut oil over medium heat.
  2. When the oil has melted, stir in maple syrup. Stir well.
  3. Once the oil and maple syrup are combined, add all of the dry ingredients.
  4. Stirring frequently, cook the mixture over medium heat for about 5 minutes or until the oats are toasted.
  5. Spread the mixture on a cutting board to cool.
  6. To make one serving, spoon ¾ cup Greek yogurt into a bowl and top with granola.
